Chili Coriander Fried Rice
Ingredients:
• 2 cups Long Grained Rice
• 1 tsp Garlic (finely chopped)
• 1 Whole Fresh Red Chili (sliced)
• 1 Green Chili (sliced)
• 1/4 tsp Black Pepper
• 1 tsp Soy Sauce
• 1/4 cup Carrots (finely chopped)
• 1/4 cup Cabbage (finely chopped)
• 3 tbsp Coriander Leaves (freshly chopped)
• 1/4 cup Spring Onions (chopped)
• 4 tbsp Oil
• Salt (to taste)
How to make Chili Coriander Fried Rice:
• Take a bowl, put rice in it and wash it thoroughly. Now soak it in water for 30 minutes.
• Drain the water and move the rice to a cooking pan.
• Place it on simmer flame and add 4 cups of water, salt to taste and 2 tbsp oil.
• When the water gets absorbed by the rice, turn off the heat. Make sure that rice is not overcooked.
• If you feel that the rice is cooked 90%, even when there is water, remove from heat, drain out the extra water and cover the pan with a lid.
• Let the rice cool down completely.
• Now, take a saucepan and heat 2 tbsp of oil in it. Add galric and saute for a few seconds.
• Now, add spring onions, cabbage, sliced red and green chilies, and carrots. Sauté it for a few minutes.
• Add coriander leaves, rice, soya sauce, black pepper and salt to it and mix well.
• Serve it hot.
Goan Chicken Fry
Ingredients:
• 1 kg Chicken
• 2½ tsp Kashmiri Chili Powder
• 1 tsp Cumin Seeds
• ½ tsp Peppercorns
• 1 tsp Mustard Seeds
• 4 Cloves
• 4 cm long Ginger
• 1 pod Garlic
• 1 tsp Turmeric Powder
• 1 tbsp Vinegar
• 1/2 cup Tomato Puree
• Salt (to taste)
• 5 tbsp Oil
How to make Goan Chicken Fry:
• Clean the chicken thoroughly.
• Grind cumin seeds, pepper corns, mustard seeds, cloves, ginger, garlic, and turmeric powder in a grinder, along with vinegar.
• Add a small amount of water to make a smooth paste. Then, add salt and mix well.
• Cover the chicken pieces with this spicy paste and keep aside for an hour.
• Now, cook the chicken in a covered pan, adding half cup of water. Cook till it becomes tender and absorbs the water.
• Add oil and fry the chicken pieces.
• Add tomato puree and let it simmer till the gravy thickens and envelops the chicken pieces.
• Serve the fried chicken with steamed rice or chapattis.
Cuban Eggs:
Ingredients:
• 6 Eggs
• 1/4 cup Sausage Meat
• 1 tsp Onion (chopped)
• 1/2 tsp Salt
• Pepper
How to make Cuban Eggs:
• Take a pan and cook meat and onion together for five minutes.
• Take a bowl and beat eggs in it, till they become light.
• Pour the beaten eggs in the pan and add salt and pepper.
• Now, on medium-low flame, cook the mixture, until the eggs turn thick and creamy.
• Serve the eggs with toasts.
Methi Palak Dhokla
Ingredients:
• 1 cup Black-eyed Beans (chawli)
• ¾ cup Spinach (palak), chopped
• ¾ cup Fenugreek Leaves (methi), chopped
• 2 tbsp Oil
• 1 tbsp Green Chili-Ginger Paste
• 1½ tsp Asafetida (hing)
• 1 tbsp Fruit Salt
• Salt, to taste
• Water
• Green Chutney (for serving)
How to make Methi Palak Dhokla:
• Wash the beans thoroughly and soak them for at least 6 hours.
• Drain the soaked beans.
• Add ¾ cup of water to the beans and blend them in a liquidizer, so as to form a smooth batter.
• To the paste, add spinach, fenugreek leaves, oil, green chili-ginger paste, asafetida and salt. Mix the batter well.
• Place a steamer on the gas. When the water starts to boil, add the fruit salt to the batter and mix.
• Grease 3 thalis and pour the batter in them. Place the thalis in the steamer and steam for about 10 minutes.
• Serve hot with green chutney.
Jelly Doughnuts
Ingredients:
• 3/4 Cup any flavor fruit jam
• 4-1/2 Cups bread flour
• 1 Cup warm milk
• 1-1/2 tsp Ground nutmeg
• 1/3 Cup water
• 3/4 Cup white sugar
• 2 Quarts vegetable oil for frying
• 1 Egg, beaten
• 1 tbsp Active dry yeast
• 1 tsp Salt
• 3 tbsp Margarine, melted
How to make Jelly Doughnuts:
• In a bread machine pan mix the milk, water, beaten egg, salt, melted butter, sugar, bread flour, nutmeg and yeast. Keep bread machine to the sweet dough cycle.
• Turn dough out onto a floured board and cool it for ten minutes.
• Roll dough out to 1/4-inch thickness; then cut it into 2 1/2 inch rounds.
• Place jam in center of half of the prepared rounds.
• Moisten the edges with chill water; top with the remaining rounds.
• Place the doughnuts on a greased sheet and cover.
• Allow it to rise until doubled about 45 minutes.
• Heat oil in fryer to 175 degrees C and fry either layer of doughnuts at a time until golden brown.
